Introduction to Professional Cookery

Date: Saturday 1st February 2020           Time: 9.30am – 4pm

In this Full Day course you will be put through your paces as you learn how to make all of the kitchen fundamentals, using modern and classic techniques. We will start with honing your knife skills, preparing different vegetables and proteins, creating the building blocks to your dishes through a variety of sauces and sides, before eventually turning to the world of modern gastronomy demonstrating the greatest warm foams and most importantly, how to present your food. Your completed dishes will be as follows –

  • Crab Tortellini with Rapeseed Hollandaise, Lemon & Dill ‘Spheres’ & Edible Flowers
  • Chicken Schnitzel with Salad Julienne
  • Chicken Bon Bon with Turned Vegetables, Fondant Potato & Jus
  • Pan Fried Seabass with Sea Vegetables & Light Fish Velouté
  • Chocolate Tart in an Almond Sweet Paste, Chocolate ‘Soil’ & Crème Anglaise

Our courses also includes:

  • A welcome drink with fellow chefs
  • Lunch with wine included
  • A recipe book to take home with you

N.B. Please arrive to all our courses 10/15 minutes early to enjoy a welcome drink with fellow chefs. Please bring containers to take home any leftovers.
